 Idli Milagai Podi

Idli Milagai Podi, is one of the most popular dish and is readily available in all the home's of southern India. This is the only recipe, that tastes uniquely as the ingredients. My mom and mother-in law, they both prepared differently and it tastes in its own way. The recipe I, posted here its my version as totally blend with our taste and preferences'. 

Basic ingredient in Idli milgai podi is Urid dhal and Channa dhal and their ratio is 1.5 :1, I always preferred to add some coriander seeds to it, as it enhance the flavors and give an unique taste (yet another secret to make it in small quantity to keep it as fresh as always).

Ingredient

1. Chana dhal                 -   1 cup.

2. Urid dhal                   -     1.5 cup.

3. Coriander seeds         - 1/2 table spoon.

4. Red chili                    -   20 to 25 nos. (1.5 cup).

5. Asafetida (hing)        - 1/2 teaspoon .

5. Salt 


Let's get started

1. The first step, is to dry roast the ingredient's each separately on medium flame. Starting from Chana dhal, urid dhal, coriander seeds and red chili.

2. Roast the dhal till golden brown color, and make sure to retain color as it enhance the taste and flavour. 

3. Allow the ingredients to cool and add it to the mixer, grind the dhal and coriander seed to a coarse powder. Then keep it as side.

4. Now grind the red chili separately to a fine powder. 

5. Now again add these Urid dhal, Chana dhal, Coriander coarse powdered to a Red chili powder and grind them together. I always prefer to have some coarsely grinded idli milagi podi.

6.Then add the salt and Hing (asfoetida) and give a nice mix.

7. Idli podi is ready to go.
