Carrot Poriyal/Carrot Stir-fry

1. About the dish

Carrot poriyal is a day to day recipe and nostalgic tiffin box sides for the school days. Carrot poriyal can be either diced or grated, I always prefer to make with the grated carrot as it makes the cooking faster.

2. Preparation time

It take around 10 minutes to grate the carrot.

3. Cooking time

It take around 5 minutes.

4. Ingredients

The ingredient listed below serve up to  two people.

Carrot                  - 2 
Coconut               - 1 table spoon
Idly powder         - 1/4 table spoon
Salt        
Oil

For seasoning

Mustard seed      - 1/4 teaspoon
Urid dhal            - 1/4 teaspoon
Chana dhal         - 1/4 teaspoon 
Red chili             - 1
Curry leaves




5.Preparation

  1. To start with, in a pan or kadai, add one table spoon of oil and add the 1/4 teaspoon of mustard seed.
  2. Once mustard seeds gets popped, add the 1/4 teaspoon of urid dhal,1/4 teaspoon of Chana dhal and 1 red chili and some curry leaf.
  3. Now add the two grated carrot and required salt and sauté it for two minutes.
  4. Adding salt at the right stage is important as it leaves the enough water for carrot to cook.
  5. Once the carrot turns to light orange, add the 1/2 teaspoon of idly powder and 1/4 teaspoon of grated coconut and saute it well.
  6. Carrot poriyal is ready to serve.
