Mix Vegetable Soup, is a creamy thick soup. I often make this soup for my daughter. This is kind of kids recipe, as it has all the vegetable starting from carrot, capsicum, green peas, this is the most versatile recipe as you can incorporate the veggie as you like. This recipe is so special to me as my daughter's first ever dish she loves and always ask for from my cooking. As she is in terrible two stage, where the things has to be done immediately, with the gesture she ask pointing the index finger to the kitchen! mmmaaa...! chouyp chouyp..!, if ask her to repeat it again, she pronounce with same gesture and same enthusiasm as maaa...chouyp ! chouyp ! whenever I hear the name soup, My thoughts will be in her gesture and voice of chouyp! chouyp !.Its quite funny right, sometime memories make the recipe more special.
The time to prepare the dish is about 10 to 15 minutes.
The cooking time is about 10 to 15 minutes.
The ingredient listed below sereved upto two.
- Chopped Beans - 1/4 table spoon
- Diced Capsicum - 1/4 table spoon
- Diced Carrot - 1 table spoon
- Green Peas - 10 to 12
- Finely Chopped Garlic - 1/4 tea spoon
- Finely Crushed Ginger (optional)
- Onion - Half small size onion
- Chopped Coriander leaves
- Shredded Cabbage - 1/4 table spoon
- All Purpose Flour - 1/2 table spoon
- Black Pepper - 1/4 tea spoon
- Butter - 1/2 table spoon
- Salt
Note: Adding ginger is totally optional, I have added to make this recipe for winter season.
- To start this recipe, take a sauce pan or kadai, add some butter and add chopped garlic, let the garlic get well roasted.
- Now add the half finely chopped onion, and saute it for a minute and add 1/2 table spoon of all purpose flour, let flour and onion get well cooked.
- Now, start to add the vegetable one by one, and saute it for a minute.
- Add water as required to boil the vegetables, let it boil for 5 minutes.
- Now strain the vegetable and vegetable broth separately and keep as side.
- To a blender, grind the cooked vegetable to a paste.
- Now in the sauce pan, add the vegetable broth and Vegetable paste, let it boil for 2 minutes. Add the required salt and pepper. Top with chopped coriander leaves and serve hot.
- If needed add some cream at top.
