1. About the dish

Rava Dosa Mix is a simple recipe and when the batter is made well before time will result in crispy dosas. The batter for the recipe, made with Rava (semolina), rice flour and all purpose flour (maida). Maida can be substituted with wheat flour as well. My mother is an expert in preparing Rava dosa mix, she makes tasty mix which produce crispy dosa. It goes well with coconut chutney, tomato chutney and sambar.

2. Preparation time

It takes 10 minutes to prepare the batter, and an hour to soak the batter.

3. Cooking time

It takes 5 minutes to cook the dosa on tawa. Rava dosa needs hot tawa and longer time to cook then the normal dosa.

4. Ingredients

The ingredients listed below serves upto 12 dosa.

Rava (semolina)                    - 1 cup
Rice flour                              - 1 cup
All purpose flour (maida)     -  2 table spoon
Salt
Black pepper                          - 1/2 teaspoon
Cumin                                    -1/2 teaspoon
green chili                              -  3 nos
cashew nut                             - 1/2 teaspoon
curry leaf
coriander leaf
ginger                                    -1 teaspoon

5. Preparation

1. First, take a bowl or vessel to prepare the batter and mix the ingredients. Now start adding 1 cup of rava(semolina),  1 cup of rice flour, 2 table spoon of all purpose flour (maida).

2. Add 4 cups of water to it, adding the water correctly to this batter is a secret of this dosa. I have measured all the ingredients and water in the same measurement cups.

3. Now add chopped green chili, chopped ginger, whole black pepper, cumin, some curry leaf, and coriander leaves, and finally some cashew.

4. Let this batter rest at least for an hour, to make rava get well soaked in the batter.

5. After an hour, the batter will look like this.

6. Now the batter is ready, let's make the dosa. Make sure to keep the tawa on hot and keep the flame on medium to high.

7. Give a nice stir to the batter until it gets evenly mixed with all the ingredients (particularly Rava gets well mixed with the batter). Batter must be in pouring consistency as shown in the video, if needed add some water.

8. Now pour the batter as flowing in the Hot tawa as shown in the video.

9. Now add some oil to it and let it cook for atleast 2 minutes. Turn the dosa to the other side and cook for another 2 minutes.

10. Rava dosa is ready to be served.
