1. About the dish 

Sambar is authentic day to day southern Indian dish. There so many varieties of sambar that can be prepared with many combination of vegetables, the most unique thing in sambar is adding ingredient correctly i.e the ratio of dhal and tamarind should go well. There is another sambar called idly sambar or tiffin sambar which is prepared without tamarind pulp. This dish is prepared for lunch and goes well with hot rice.

To prepare the sambar it takes 5 minutes. Basically to cut the veggies and soak the tamarind (if you are using tamarind pulp you can skip), and soak the lentil (toor dhal).

4. Ingredients 

Lets have a look at the ingredients and it serves up to 3 people

1. Diced Pumpkin - 15 to 18 pieces 
2. Toor dhal          - (1/2 cup)
3. Tamarind           - small gooseberry size
4. Green chili         - 2 
5. Turmeric powder - 1 tea spoon
6. Sambar powder  -  1 table spoon
7. Hing
8. Salt

For seasoning 
1. Mustard seeds - 1 tea spoon 
2. Fenugreek seeds - 1tea spoon
3. Curry leaf           - small handful 
4. Coriander           - small handful




5. Preparation 

1.To start with recipe first soak the toor dhal in water for 5 minutes, then transfer the soaked toor dhal to a cooker and add 1 tea spoon of turmeric powder give a dhal 4 whistle on a medium flame.

2. Now take the toor dhal and slightly mash it up with serving spoon, and keep it aside.
 
3. Then to a kadai or pan add 2 table spoon of vegetable oil , and add mustard seed, fenugreek seed, curry leaves, green chili, Hing and add diced pumpkin to a pan and sauté it for 2 minutes.

4. Now with a strainer strain a tamarind pulp and tamarind water separately and keep aside tamarind water, or use 2 tablespoon of  tamarind paste .

5. Now add the tamarind water to a veggie mix pan let it boil for 5 minutes. At this stage add 1 teaspoon of turmeric powder and 1 full table spoon of sambar powder to a pan.

6. Now add salt as required. Let it boil for 5 to 7 minutes.
 
7. Now finally add mashed dhal to it.

8. Let the dhal mix with sambar in a low flame for 2 minutes. Consistency of sambar should be thick. Finally add chopped coriander leaves, and switch off the flame.


Now the pumpkin sambar is ready to go with rice.
